Quick & Easy Chilli Con Carne Recipe | UK Style Comfort Food

Warm up with this hearty, UK-style Chilli Con Carne recipe! Packed with rich flavors, tender beef, and a blend of spices, it’s the perfect one-pot meal for cozy nights. Ingredients:

  • ½ tsp black pepper
  • ½ tsp white pepper
  • ½ tsp fine sea salt
  • ½ tsp ground coriander
  • ½ tsp smoked paprika
  • 4 garlic cloves
  • 2 medium white onions
  • 500g beef mince, 20% fat
  • 1 bell pepper
  • 240g kidney beans
  • 2 bay leaves
  • 60g tomato paste
  • 400g chopped tomatoes
  • 1 beef stock cube
  • ½ of marmite (optional)

Method:

  1. Start by preparing the vegetables. Chop the onions, garlic and sweet peppers into medium size. (Remember to remove the membrane from inside the sweet pepper to avoid a bitter taste.) set aside.
  • Slowly heat a large sauté pan over a medium/high flame. Once the pan is heated evenly, add the minced beef. (Do not add any oil to the pan as the meat will gradually release fat and water.) Break into chunks to avoid clumping.  Leave the meat to brown, mixing every so often to avoid burning. Adjust the heat to a medium/low flame.
  • Once the meat has a nice crisp brown coating, remove it from the pan and set aside. Leave the oil from the mince in the pan. Add the chopped vegetables to the pan and stir to avoid burning.
  • Once the vegetables have softened slightly, add the dry spices and bay leaves and mix in thoroughly. Add the tomato purée, stir and cook on a medium/low heat to remove the bitter taste. Cover and leave until the tomato paste has a deep red colour.
  • Add the minced beef back into the pan and mix in well.  Add the chopped tomatoes and kidney beans, mixing them evenly. Add enough water to just cover the ingredients. Cover with the lid once more, leaving the lid ajar. Leave to simmer until it slightly thickens and the water has reduced.
  • Add the stock cube and marmite (optional) and stir. Remember to taste for salt and add to your preference. Add the lid ajar again and leave to simmer.
  • Remove the lid, and simmer on a low heat until the chilli con carne is thick and has less water

Serve with a jacket potato. With loads of cheese or a lovely crusty bread!
