Ingredients:
- 500g brussel sprouts
- ½ white onion
- 1 garlic clove
- 1 tsp cracked black pepper
- Pinch of fine sea salt
- Pure maple syrup
Method:
- Place the Brussel sprouts into a bowl. Discard any damaged, loose and yellowing leaves. Trim the base of the sprouts (Be careful not to trim too much off or more leaves will fall off)
- Cut any that are too big into bite-size pieces. Leave the tiny or smaller sprouts whole. Once sprouts are all uniform size wash well to remove any debris.
- In a medium satué pan, add a small amount of water to parboil the sprouts. Allow the water to heat up until tiny bubbles form. Salt the water and add the Brussel sprouts to steam/simmer for 3-5 minutes.
- While the Brussel sprouts steam, dice the onion and garlic. Heat a little oil in a saucepan and cook down the onions and garlic until soft. Remove from the heat.
- When the sprouts are ready, they should be bright green and soft. Remove from the heat and drain the water.
- Add the Brussel sprouts to the onion and garlic saucepan, and stir to even the onions, garlic and Brussels sprouts. Add a pinch of sea salt, a generous pour of maple syrup and black pepper and mix thoroughly.
- Broil under a hot grill (230-250°c), frequently tossing so that all the sprouts can caramelise. Serve immediately
